Our Story

Most kitchens are closing when ours starts.

Wakishi Ramen began in 2023 in Long Beach, California, with one rule: the broth decides everything. Get that right and the bowl takes care of itself.

So that's where the hours go. Bones and aromatics, simmered until the soup turns thick, creamy and deep — the kind of broth that coats the noodle instead of sliding off it. Nothing rushed, nothing thinned out to stretch a batch.

Now we're in Downtown Los Angeles, and we open at 8 at night and cook until 4 in the morning — 5 on Fridays and Saturdays. Our people are the line cooks coming off shift, the night crews, the ones leaving late and the ones heading home. The city they work in is asleep. We're not.

There's no dining room. Pick-up and delivery only, so everything we have goes into the bowl — made to order, sealed fresh, still steaming when it reaches you.

Come find us late. That's when ramen is best anyway.
